This Recipe Has been requested by several people since the cake was
served at the Chillifest in 2003.

From the kitchen of Teresa D.


1 pkg. (18 1/4 oz.) white cake mix
2 eggs
1/3 cup unsweetened applesauce
1 can (11 oz.) mandarin oranges, undrained.

Preheat oven to 325 degrees. In a mixing bowl, combine the cake mix, eggs,
applesauce and oranges. Beat on low speed for 30 seconds; beat on medium
speed for 2 minutes,  Pour into greased and floured 13" by 9" by 2" or (2) 9"
round baking pans.  Bake for 30-35 minutes or until inserted wooden
toothpick comes out clean.  Cool completely.

TOPPING

1 carton (8 oz.) frozen whipped topping, thawed.
1 can (8 oz.) crushed pineapple, undrained.
1 pkg. (3.4 oz.) instant vanilla pudding mix.

In another mixing bowl, beat whipped topping, pineapple & pudding mix.  
Spread over top and/or between layers.  Chill.

Yield: 12 to 16 servings.
